Puran poli is a traditional Indian recipe prepared during festival like Holi and Gudi Padwa.
Ingredients
2 cups chana dal (soaked in water overnight )
jaggery- two and a half cups,
wheat flour half cup
Maida 2 cups,
ghee, salt to taste, turmeric and Elachini 2 tsp .
Method
Step number 1.
Soak chana daal overnight to make it soft.
Wash the soaked chana daal (gram )and add a pinch of salt and turmeric .
Add a little amount of water. Water should be just enough to cover the chana dal.
Cook in pressure cooker for 6 to 8 whistles.
IMP:- Do not add add extra save water as it may cause loose consistency of dal and it may cause difficulty in making dough.
Step number 2. Making the coating.
Add maida, wheat flour ,ghee, water, pinch of salt and make a soft dough.
Cover it with a wet cloth and keep it aside for 20 minutes.
Step number 3. Making the stuffing Puran.
Once the chana dal is cooked in pressure cooker open the lead and smash it well.
While smashing also add jaggery in the hot cooker.
Jaggery will melt in the hot daal and it will be very easy to to smash and mix to form a a fine consistency.
Finally add some elaichi powder to give nice flavour.
Keep the flame on and let the extra water get evaporated.
Soon stuffing Puran will be ready.
Step number 4 (making puran poli)
Take a small amount of Maia dough . Make small thick round shaped chapati. Keep a small ball of puran in the centre of this thick chapati. Close this chapati by bringing all the ends in the centre.
Sprinkle little maida flour on this ball.
Gently press and roll it into little thik polis.
Roast it on heated pan . While roasting add ghee on it.
When it starts looking golden brownish in colour, remove it from the pan.
Mouth watering yummy puran poli s are ready.
Serve puran poli with curry , along with extra ghee.
